Cabbage with meat sauce

1cupChopped onion
1cupTomato juice
1canTomatoes -- 14 1/2 oz
Diced with liquid
2tablespoonsFresh oregano -- or 2 tsp.
Dried
¼teaspoonSalt
1dashPepper
¼cupButter or margarine
1mediumHead of cabbage -- thinly
Sliced

Directions

In a skillet, cook sausage, green pepper and onion until the sausage is browned; drain. Stir in the tomato juice, tomatoes, oregano, salt and pepper; simmer for 1 hr. Melt butter in a dutch oven; saute cabbage over med. heat until tender, about 15 min. Transfer to serving platter; top with the meat sauce. Yield: 4 to 6 servings.
