Buttermilk cracked wheat bread

Yield: 1 loaf

Measure Ingredient
½ cup Cracked wheat
1⅜ cup Buttermilk; or 5T buttermilk powder and 1 3/8c water
2 cups Whole wheat flour
1 cup Bread flour
1½ teaspoon Salt
1 tablespoon Shortening
2 tablespoons Honey
¼ teaspoon Baking soda
2 teaspoons Red Star yeast


Place all ingredients in bread pan, select light crust setting, and press start. After the baking cycle ends, remove bread from pan, place on cake rack, and allow to cool 1 hour before slicing.

Book's Note: The raw cracked wheat adds a crunchy texture to this noteworthy whole wheat bread. It's not as tall as some loaves, but it's just as delicious.
