Burgers o'brien

Yield: 6 servings

Measure Ingredient
1 pack Potatoes, frozen hash browns
12 oz. or 3 cups
¼ cup Onion, chopped
¼ cup Pepper, green, chopped
2 tablespoons Olive oil
1 large Egg, beaten
2 tablespoons Pimiento, chopped
1½ teaspoon Salt
¼ teaspoon Pepper
1½ pounds Beef, ground
8 larges Burger buns, split, toasted

Sprinkle potatoes with salt. In skillet, combine potatoes, onion, green pepper, oil. Cover and cook until potatoes are tender, stirring occasionally.

Combine egg, pimiento, 1½ ts salt, pepper, stir into potato mixture. Ass grd. beef, mix well. Shape meat mixture into 6 patties, about ½ inch thick.

Grill over medium-hot coals for 5 minutes. Turn and grill 3 to 4 minutes more. Serve patties on toasted buns, place pepper ring on top of each, if desired.
