| ¼ | cup | Onion, chopped |
| ¼ | cup | Pepper, green, chopped |
| 2 | tablespoons | Olive oil |
| 1 | large | Egg, beaten |
| 2 | tablespoons | Pimiento, chopped |
| 1½ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| 1½ | pounds | Beef, ground |
| 8 | larges | Burger buns, split, toasted |
Directions
Sprinkle potatoes with salt. In skillet, combine potatoes, onion, green pepper, oil. Cover and cook until potatoes are tender, stirring occasionally.
Combine egg, pimiento, 1½ ts salt, pepper, stir into potato mixture. Ass grd. beef, mix well. Shape meat mixture into 6 patties, about ½ inch thick.
Grill over medium-hot coals for 5 minutes. Turn and grill 3 to 4 minutes more. Serve patties on toasted buns, place pepper ring on top of each, if desired.
