Broccoli-spinach spread

Ingredients

¼ | cup | Extra-virgin olive oil |
1 | teaspoon | Whole cumin seeds |
½ | teaspoon | Crushed red pepper flakes |
2 | tablespoons | Fresh lime juice |
½ | teaspoon | Salt |
¼ | teaspoon | Black pepper |
1 | pounds | Broccoli, cut into 1/4\" pieces, include stem |
¼ | pounds | Fresh spinach |
½ | cup | Water |
2 | tablespoons | Grated coconut |
Directions
Heat oil in non-stick frying pan over medium-low heat. Add cumin & pepper flakes & fry for ½ minute. Stir in lime juice, salt, pepper, vegetables & water. Cover & simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes). Stir occasionally.
Immediately before serving, spread about 1 tb of mixture on poppy seeds crackers, (see recipe). Sprinkle with coconut.
