Yield: 24 canapes
|¼ cup||Extra-virgin olive oil|
|1 teaspoon||Whole cumin seeds|
|½ teaspoon||Crushed red pepper flakes|
|2 tablespoons||Fresh lime juice|
|¼ teaspoon||Black pepper|
|1 pounds||Broccoli, cut into 1/4" pieces, include stem|
|¼ pounds||Fresh spinach|
|2 tablespoons||Grated coconut|
Heat oil in non-stick frying pan over medium-low heat. Add cumin & pepper flakes & fry for ½ minute. Stir in lime juice, salt, pepper, vegetables & water. Cover & simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes). Stir occasionally.
Immediately before serving, spread about 1 tb of mixture on poppy seeds crackers, (see recipe). Sprinkle with coconut.
