Blueberry vinegar

Yield: 1 Servings

Measure Ingredient
1 cup Sugar
1 \N Orange ; zest of
2 pints Blueberries; washed and drained

Place blueberries in large bowl. Cover with vinegar.let stand for 1 hour.

Transfer to large, nonreactive sasucepan. Add sugar and orange zest.

Bring to a boil. Reduce heat. Simmer, covered for 20 minutes. Strain, press out as much liquid as possible. Pour into hot glass jars or fancy bottles.
