Black bean-mango salsa

Yield: 8 Servings

Measure Ingredient
1 cup Black beans; cooked
2 \N Whole mangos; peel, seed, chop
½ \N Red bell pepper; diced
½ \N Green bell pepper; diced
½ \N Red onion; diced
¾ cup Pineapple juice
½ cup Fresh lime juice
½ cup Cilantro; chopped
2 tablespoons Ground cumin
1 small Jalapeno; or chile of choice
\N \N Salt and pepper; to taste

If mangos aren't too ripe, this can last for up to 4 days covered in the fridge.
