Big bucket in the sky fried chicken

Yield: 1 batch

Measure Ingredient
2 cups Dry pancake mix
2 packs Good Seasons Italian
\N \N Dressing mix (0.9 oz)
1 large Egg
⅓ cup Club soda or beer
3 pounds Chicken fryer parts
1½ pint Vegetable oil

In a roomy bowl, combine the pancake mix with package of salad dressing mix. Combine remaining dressing package with egg and club soda. Dip each piece of chicken into egg/soda mix then into pancake mixture. Place pieces on rack or toweling, without touching each other, to dry about five minutes.

Meanwhile, pour enough oil into heavy 2½ quart saucepan or deep fryer to give you a depth of at least 2 ½". Heat oil to about 425 F. Brown coated chicken pieces in hot oil for 5-6 minutes. Reduce heat as necessary to regulate temperature recovery. Spear each piece with the tip of a sharp knife, removing to baking sheet. Arrange pieces on sheet so that they aren't touching.

Bake, uncovered, in preheated 350 F. oven about 30 minutes.
