Best salmon loaf

Quantity | Ingredient | |

1 | can | Salmon; (15 oz) |
2 | cups | Soft bread crumbs |
⅔ | cup | Olive; sliced |
⅓ | cup | Onion; minced |
¼ | cup | Milk |
2 | Eggs | |
2 | tablespoons | Parsley; fresh, minced |
1 | tablespoon | Lemon juice |
¼ | teaspoon | Dill weed |
1 | dash | Pepper |
Drain salmon, reserving 2 tablespoons liquid. Flake salmon and combine with reserved liquid and remaining ingredients. Mix well. Shape into a 8½ x 4 ½ loaf pan. Bake at 350 for 45 minutes.
For patties: Prepare as above. Shape into eight 1-inch thick patties.
Pan-fry on both sides in 2 tablespoons of butter until golden brown.
