1 Servings
Ingredients
Quantity | Ingredient | |
---|---|---|
1 | bunch | Beets (4-5) |
¼ | cup | Feta cheese (I like more) |
½ | A lemon ; juice of | |
Olive oil | ||
Fresh dill - chopped |
Directions
1. Cook the beets in boiling water until just tender (not mushy) 2. Remove skins and cut into small cubes. 3. Place in a bow, drizzle with olive oil (not too much), lemon juice and dill to taste; toss. 4. Sprinkle with crumbled feta cheese and serve. The contrast between the sweet beets and the salty feta is awesome ! Posted to TNT - Prodigy's Recipe Exchange Newsletter by RecipeLu <recipelu@...> on Aug 15, 1997
