Beef and french fries (thit bo va khoai tay chien)

Yield: 4 servings

Measure Ingredient
8 tablespoons Vegetabke iuk
2 larges Peeled potatoes -- cut into
\N \N Matchsticks
1 medium Onion -- thinly sliced
2 \N Cloves garlic -- minced
10 ounces Sirloin steak -- cut into
\N \N Thin slices
2 teaspoons Cornstarch
3 teaspoons Water
1 teaspoon Sugar
2 teaspoons Nuoc Mam sauce
\N \N OR light soy sauce

1. Pour 6 tablespoons oil into a skillet. Add the potatoes and fry until brown. Discard the oil and set aside the potatoes. 2. Fry the onion and garlic in 2 tablespoons oild. Add the beef and stir-fry for 1 minute. 3. Mix the cornstarch, water, sugar, and Nuoc Mam sauce to a smooth paste. Add this to the beef and stir. Add the potatoes and stir well to combine.
