Basic salsa #1

Ingredients

4Medium Tomatoes,drained, finely chopped
½cupOnion, chopped
½cupCelery, chopped
¼cupGreen pepper, chopped
¼cupOlive or cooking oil
3tablespoonsGreen chili peppers, canned, chopped
2tablespoonsRed wine vinegar
1teaspoonMustard seed
1teaspoonCoriander seed, crushed

Directions

Combine tomatoes, onion, celery, green pepper, olive or cooking oil, green chili peppers, vinegar, mustard seed, coriander seed, 1 t salt, and dash of pepper. Cover; refrigerate several hours or overnight; stirring occasionally. Garnish with green pepper strips, if desired.

Serve as a relish. Makes about 3 cups.
