Salsa recipe

Yield: 1 Servings

Measure Ingredient
1 large Tomato, seeded and chopped
½ \N Onion, chopped (more if you like)
1 \N Green (or yellow or red or all 3) pepper, seeded and chopped fine
1½ teaspoon Vinegar
¼ teaspoon Sugar (this draws out the juices of the veggies) (up to 1/2)
½ teaspoon Salt (or more to taste)

Put all ingredients into a bowl. Mix well. Let sit on counter for at least an hour, covered with plastic wrap, stirring every once in a while. Before serving, add a sprinkling of cilantro, fresh or dried. If you like, you can add a chopped garlic clove. We like to eat it with ff tortilla chips, or on rice. Of course, you can make as big or small a batch as you like. Just play with it, and you'll get the right combo of vinegar, salt and sugar. If you like the heat (which I don't), add jalapenos.
