| 2¼ | teaspoon | Baking powder |

| 8 | Dried dates, chopped | |
| 1 | Egg beaten -or- | |
| ¼ | cup | Egg substitute |
| 1½ | Very ripe medium sized banana-mashed | |
| ¼ | cup | Skim milk (I like the 1% better) |
Directions
I just made this recipe two days ago and thought it was pretty good and a significant drop in fat! It is taken from 'The Weight Watchers Complete Cookbook and Program Basics', page 75, Macmillan-(I made couple of slight modifications to this if you have the book).
Preheat oven to 350 degrees F. Spray 8X4" loaf pan with cooking spray. In a medium bowl, combine dry ingredients. Make a well in the middle of the dry ingredients and add the egg, banana, and the milk. mix these slightly in the middle, then blend with flour mixture until just mixed-Do not overmix! Pour into loaf pan and bake about 1 hour or until toothpick inserted in the middle comes out clean. Turn out onto rack to cool.
per serving (with the egg and the skim milk) 119 calories, 3 g. protein, 1 g. fat, 26 g. carbohydrate, 193 mg Sodium, 18 mg cholesterol, 1 g. dietary fiber.
