Yield: 4 servings
|1 pounds||Fresh spinach leaves|
|½ pounds||Frozen spinach, thawed|
|8 fluid ounce||Brown rice|
|16 fluid ounce||Hot water|
|4 ounces||Grated cheddar cheese|
|2||Large eggs, beaten|
|2 tablespoons||Chopped parsley|
|2 tablespoons||Bread crumbs|
|1 tablespoon||Melted butter|
Melt the butter and oil in a saucepan and soften the onion it it, then stire in the rice to get it coated with oil. Add the hot water, stir once, and simmer gently with a lid on for 40 minutes or until the grain is cooked.
As soon as the rice is cooked, cool it in a bowl, then combine it with the grated cheese and stir in the eggs and parsley followed by the chopped spinach. Season well and add a good grating of nutmeg.
Now place the mixture into a large oiled pie dish, mis the breadcrumbs with the melted butter and cayenne and sprinkle that over the top.
Bake in the centre of the oven for about 35 minutes.
