Spinach~ mushrooms~ & brown rice with chees

Yield: 6 Servings

Measure Ingredient
1 tablespoon Olive oil
3 tablespoons Butter
1 large Garlic clove -- minced
1 cup Mushrooms -- sliced
1½ pounds Spinach -- shredded
\N \N (about 5 cups)
¼ teaspoon Pepper
1¼ cup Cheddar cheese -- shredded
½ cup Cottage cheese -- small
\N \N Curd
3 cups Short-grain rice -- cooked
6 slices Mozzarella cheese
\N \N Paprika

Preheat oven to 400. Oil an 8" square baking dish.

Heat oil and butter in a 10 inch skillet. Add garlic and mushrooms and cook, stirring, for 1 minute. Add spinach and stir and cook about 2 minutes, or until spinach wilts. Stirin pepper, cheddar cheese, and cottage cheese and set aside.

Make a layer of rice on bottom of baking dish. Spoon spinach cheese mixture evenly over rice. Top with mozzarella cheese and sprinkle with paprika. Bake for 8 to 10 minutes then broil for about 1 minute, or until cheese is bubbly and brown. Cut into squares and serve very hot.
