Baked apples a l'orange

Yield: 6 servings

Measure Ingredient
6 mediums Cooking apples
¼ cup Unsweetened apple juice
¼ cup ;water
1 tablespoon Lemon juice
2 eaches Whole cloves
1 each (4-inch) stick cinnamon; broken in half
⅓ cup Reduced-calorie orange marmalade
6 smalls Gingersnap cookies; crushed

Core apples to within ½ inch from bottom; peel top third of each apple. Place apples in a 12" x 8" x 2" baking dish; add apple juiceand next 4 ingredients. Bake, uncovered, at 350F for 30 minutes, basting often with cooking liquid. Remove apples from oven; spoon equal amounts of marmalade into center of each apple, and sprinkle with gingersnap crumbs. Bake an additional 5 minutes or until apples are done.
