| ¼ | cup | Unsweetened applesauce |
| ½ | cup | Nonfat buttermilk |
| ¼ | cup | Firmly packed brown sugar |
| ¼ | cup | Frozen egg substitute; thawed |
| 2 | tablespoons | Vegetable oil |
| 1¼ | cup | All-purpose flour |
| 2 | teaspoons | Baking powder |
| ¼ | teaspoon | Salt |
| ½ | teaspoon | Ground cinnamon |
| ¼ | cup | Raisins |
| Vegetable cooking spray | ||
Directions
Combine first 3 ingredients; let stand 5 minutes. Add brown sugar, egg substitute, and oil; stir well. Combine flour, baking powder, salt, and cinnamon; make a well in center of mixture. Add cereal mixture, stirring just until dry ingredients are moistened. Fold in raisins. Spoon batter into muffin pans coated with cooking spray, filling three-fourths full.
