Apple-sage chutney

Measure Ingredient
⅓ cup Onion; thinly sliced
2½ pounds Apple; tart, coarsely chopped
1 cup Apple cider; or apple juice
½ cup Light brown sugar; packed
⅓ cup Dried cherries
½ cup Golden raisins
⅓ cup Dates; chopped
6 tablespoons White wine vinegar
2 \N Cloves garlic; minced
½ cup Sage; chopped
