Apple-ginger chutney

Ingredients

3poundsTart apples peel/core/finely chop
2cupsBrown sugar; packed
cupCider vinegar
tablespoonSalt
teaspoonGround ginger
1teaspoonGround allspice
1teaspoonGround cloves
1Green peppers; finely chop
1mediumOnion; finely chop
½cupPreserved ginger in syrup finely chop
½cupGolden raisins
Grated peeled and juice
Of 1/2 lemon

Directions

In pan bring 1st seven ingredients to boil. Simmer 10 minutes. Add rest of ingredients and cook for l hour. Ladle into prepared jars and process. Give 1 month to mature.
