Core just 4 of the apples and dice; sprinkle with lemon juice to keep color bright. Combine with celery, marshmallows, nuts, raisins and mayonnaise. Spoon mixture into lettuce cups. Core remaining apples; cut in ½-inch slices and brush with lemon juice. Form in pin wheel atop each salad. Center with additional raisins. Makes 8 servings.
