Apple pin-wheel salads

Yield: 8 servings

Measure Ingredient
\N \N Newspapers from the 40's to
\N \N Traditional Waldorf salad- only this time add tiny marshmallows and some
\N \N Raisins.
6 eaches Unpared red medium apples
\N \N Lemon juice, fresh, frozen, or canned 70's
1 cup Celery slices
¾ cup Tiny marshmallows
½ cup Coarsely broken California walnuts
⅓ cup Seedless raisins
½ cup Mayonnaise or salad dressing
8 eaches Lettuce cups

Core just 4 of the apples and dice; sprinkle with lemon juice to keep color bright. Combine with celery, marshmallows, nuts, raisins and mayonnaise. Spoon mixture into lettuce cups. Core remaining apples; cut in ½-inch slices and brush with lemon juice. Form in pin wheel atop each salad. Center with additional raisins. Makes 8 servings.
