Amaretto chicken

3 | tablespoons | Flour |
1½ | teaspoon | Salt |
1½ | teaspoon | Pepper |
2 | teaspoons | Paprika |
1 | tablespoon | Olive oil |
3 | tablespoons | Butter |
1½ | tablespoon | Dijon mustard |
6 | ounces | Frozen orange juice |
Concentrate | ||
1 | cup | Amaretto |
Directions
Mix the can of frozen orange juice concentrate with half a can of water
Preheat the oven to 350 degrees. Combine flour, salt, pepper, and paprika. Coat chicken with this mixture. Heat oil and butter in skillet and saut chicken until brown. Remove and place in casserole dish. Add mustard, orange juice mixture, and amaretto to skillet and bring to a boil, stirring constantly, until thickened. Pour sauce over chicken and bake, covered, for 40 minutes.
Note: Excess sauce can be frozen and poured over plain or floured chicken later on, or OJ/mustard/amaretto can be frozen by itself, add only what you need for sauce to the skillet if using fewer than 8 chicken breasts.
