Aidells sausage hash

1 | large | Onion; cut 1/4\" dice |
½ | Stick unsalted butter | |
4 | Links AidellsĀ® Cajun Brand Andouille Sausage; cut 1/2\" dice | |
½ | cup | Red bell pepper; cut 1/4\" pieces |
½ | cup | Green bell pepper; cut 1/4\" pieces |
¼ | teaspoon | Salt |
½ | teaspoon | Black pepper |
¼ | teaspoon | Cayenne |
Salt and pepper; to taste | ||
¼ | cup | Finely chopped green onions; for garnish |
Directions
In a heavy large frying pan, saute the potatoes and onions in the batter over medium heat for 15 minutes, stirring occasionally. Add the sausage, bell peppers, salt, black pepper and cayenne, and continue frying until the sausage is browned, about 5 minutes. Add salt and pepper to taste and serve garnished with green onions.
Can substitute New Mexico Brand Smoked Turkey and Chicken Sausage, Smoked Spicy Santa Fe Brand Turkey and Chicken Sausage, Fresh Mexican Beef Chorizo (removed from casing), Smoked Turkey and Chicken Sausage with Sun-Dried Tomatoes, etc.
