7 grain oatmeal cake

| 1 | cup | AM Canola Oil |
| 2 | cups | Maple syrup |
| 1½ | teaspoon | Vanilla MIX TILL SMOOTH: |
| 2 | cups | AM Unbleached White Flour |
| ⅜ | cup | AM Soy Flour |
| ½ | cup | Cold water |
| ½ | cup | Soy milk |
| 1½ | teaspoon | Grated lemon rind |
| 1½ | teaspoon | Sea salt (optional) |
| 3 | Egg whites | |
| 2 | teaspoons | Cinnamon |
| 2 | teaspoons | Non-alum baking powder MIX THE ABOVE 2 MIXTURES TOGETHER AND ADD: |
| 1 | cup | Cooked AM 7 Grain Cereal |
| 5 | cups | AM rolled Oats |
| ½ | cup | Raisins (optional) |
| ½ | cup | Chopped nuts |
Directions
Mix well and fill oiled cake pan ¾ full. Bake 350 F. until light golden brown. This is not a very sweet cake. May be served with apple butter, honey, etc.
