Oatmeal cake #1

Yield: 1 Servings

Measure Ingredient
1 cup Oats
1¼ cup Boiling water
2 \N Eggs; well beaten
1 cup White sugar
1 \N Stick butter
1 cup Brown sugar
1 teaspoon Cinnamon
½ teaspoon Salt
1 teaspoon Vanilla
1 cup Brown sugar
1 cup Shredded coconut
½ cup Cream
4 tablespoons Butter


CAKE: Combine oats and water. Let stand 20 minutes. Mix eggs, sugar, butter, brown sugar, cinnamon, salt and vanilla. Mix with oats. Bake in 9x13-inch pan at 350 for 30 minutes or until done. TOPPING: Combine ingredients. Spread on cake while hot; broil a minute to brown topping.

Best if served warm.
