7-grain oatmeal cake

Yield: 1 Cake

Measure Ingredient
1 cup AM Canola Oil
2 cups Maple syrup
1½ teaspoon Vanilla MIX TILL SMOOTH:
2 cups AM Unbleached White Flour
⅜ cup AM Soy Flour
½ cup Cold water
½ cup Soy milk
1½ teaspoon Grated lemon rind
1½ teaspoon Sea salt (optional)
3 Egg whites
2 teaspoons Cinnamon
2 teaspoons Non-alum baking powder MIX THE ABOVE 2 MIXTURES TOGETHER AND ADD:
1 cup Cooked AM 7 Grain Cereal
5 cups AM rolled Oats
½ cup Raisins (optional)
½ cup Chopped nuts

Mix well and fill oiled cake pan ¾ full. Bake 350 F. until light golden brown. This is not a very sweet cake. May be served with apple butter, honey, etc.
