Country oat cake

Yield: 16 servings

Measure Ingredient
1 pack Spice cake mix (18.5 oz.)
1 cup Quaker Oats, uncooked (quick or old-fashioned)
8 ounces Plain low-fat yogurt
3 \N Eggs; OR...
1 cup Quaker Oats, uncooked (quick or old-fashioned)
½ cup Brown sugar, firmly packed Egg substitute
¼ cup Vegetable oil
¼ cup Water
1½ cup Finely chopped apple (about 2 medium)
¼ cup Margarine or butter; melted
½ teaspoon Ground cinnamon
\N \N Whipped cream (optional)

CAKE

TOPPING

Heat oven to 350 F. Grease and flour 13 x 9-inch baking pan. For cake, combine first six ingredients. Blend on low speed of electric mixer until moistened; mix at medium speed 2 minutes. Stir in apple.

Pour into prepared pan. For topping, combine oats, brown sugar, margarine and cinnamon; mix well. Sprinkle evenly over batter. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Serve with whipped cream, if desired.
