Pasta with grilled vegetables

Ingredients

8ouncesSpaghetti -- uncooked
3tablespoonsOlive oil -- divided
1largeGarlic clove -- minced
2smallsZucchini -- cut in 1/4\"
Slices
1Red bell pepper -- seed &
Cut in 1/2\"
¼poundsMushroom -- sliced
3tablespoonsFresh basil -- chopped
1tablespoonLemon juice
2teaspoonsLemon peel -- grated
½tablespoonSalt
¼teaspoonBlack pepper

Directions

Heat grill or broiler. Meanwhile, cook spaghetti in boiling salted water according to package directions until just tender. In a cup mix 1 Tbs oil and the garlic. Arrange vegetables on a grill grid or broiler rack. Brush vegetables with oil mixture and cook until tender; turning once, 6 to 8 minutes. Place in a large bowl. Add remaining 2 Tbs oil, the chopped basil, lemon juice, lemon peel, salt and pepper. Drain spaghetti and add to vegetables in bowl. Toss to combine. Garnish with basil and serve with cheese.
