Zesty corn relish

Yield: 6 servings

Measure Ingredient
17 ounces Corn, Whole Kernel, Drained
4 ounces Pimento, Chopped, Drained
⅓ cup Sweet Relish
⅓ cup Bell Pepper, Chopped
¼ cup Sugar
¼ cup Onion, Chopped
¼ cup Vinegar
1 tablespoon Mustard, Prepared
1 teaspoon Cornstarch
½ teaspoon Celery Seed

In a medium saucepan, combine all ingredients; mix well. Bring to a boil and boil for 1-2 minutes or until clear and thickened, stir occasionally. Refrigerate for several hours to blend flavors. Store in refrigerator for up to 3 weeks. From: Syd's Cookbook.
