Microwave corn relish

Yield: 8 servings

Measure Ingredient
3 cups Whole kernel corn
1 cup Chopped red pepper
1 cup Chopped onion
½ cup Cider vinegar
6 tablespoons Sugar
2 teaspoons Salt
2 \N Minced jalapeno chilies
½ teaspoon Cumin

In 3-quart microwave-proof bowl combine: Cover with plastic, vent.

Microwave on HIGH 8 minutes, stirring once. Spoon into four 8-ounce jars. Tighten lids of jars; chill. Makes 4 cups. Store in refrigerator. Submitted By MICHELLE HOWE On 08-16-95
