Whole wheat banana nut bread

Ingredients

| 1¾ | Cup whole wheat flour (I use white ok) | |
| 1 | teaspoon | Baking soda |
| ½ | teaspoon | Salt |
| ⅓ | cup | Oil |
| ½ | cup | Honey (I use sugar with good results - brown most times) |
| 2 | Eggs, beaten | |
| 1 | cup | Mashed bananas (3 medium) |
| ¼ | cup | Hot water |
| ½ | cup | Chopped pecans or other nuts (I usually leave out) |
Directions
(Whole foods for the whole Family) Sift dry ingredients together. Cream oil and honey in large bowl. Add eggs 1 at a time, beating well after each addition. Stir in bananas. Add dry ingredients alternately with hot water, mixing well after each addition. Fold in pecans. Pour into a greased 5x9-inch loaf pan. Bake at 325F for 55 to 60 minutes. Invert onto wire rack to cool completely before slicing. Freezes well. Yield: 12 servings.
