|3 pounds||Ground turkey|
|2 eaches||Red onions, diced|
|1 bunch||Celery, sliced|
|4 eaches||Leeks, cleaned and diced|
|4 eaches||Cloves garlic, minced|
|3 ounces||Diced green chili peppers|
|2 eaches||Red bell peppers, diced|
|2 tablespoons||Ground coriander|
|3 tablespoons||Ground cumin|
|2 cans||Cannelini beans|
|3 eaches||Qts chicken broth|
|3 tablespoons||Chili powder|
In a skillet, brown the ground turkey with the garlic and onions.
Drain off the fat. Place the turkey mixture in a stock pot over medium heat. Add the next 6 ingredients and stir until the flour is smooth- cooked. Add the stock and stir until the mixture is thickened. Add the remaining ingredients and simmer for 1 hour.
