Whipped mashed potato with goat's cheese and bacon

Ingredients

| 6 | ounces | Goat's cheese; softest available |
| 3 | ounces | Lean bacon; finely diced |
| 1 | ounce | Butter |
| 1 | Clove garlic; peeled and crushed | |
| 2 | tablespoons | Snipped chives |
Directions
1 Cook the potatoes in boiling salted water, drain and return to the pan on a low heat. Mash to a puree. Heat the butter in a frying pan, add the bacon, garlic and chives, and cook with the bacon till crisp.
2 Add the olive oil and goat's cheese to the pureed potatoes and, using a wooden spoon, beat until light and fluffy. Season with salt and pepper, mix in the bacon mixture and serve. Converted by MC_Buster.
