Whipped berry pudding

Yield: 4 Servings

Measure Ingredient
3 cups Fruit juice
½ cup Cream of wheat
½ cup Sugar
\N \N Lemon juice; optional

Date: Tue, 26 Mar 1996 20:49:59 -0700 (MST) From: pique@... (PHYLLIS KANGAS) Heat the juice until boiling and sprinkle in the cream of wheat. Stir quickly to prevent lumping. Cook slowly until cereal is done. Pour into large bowl and whip at highest speed until very light and fluffy-about 20 minutes. Sweeten to taste. If using a non-tart juice such as apple, add lemon juice to taste. Serve with milk when chilled.
