Wasabi mayonnaise

Measure Ingredient
3 Egg yolks
½ teaspoon Salt
I tablespoon lemon Juice
3 tablespoons Japanese rice vinegar or white wine vinegar
2 tablespoons Soya sauce
2 tablespoons Dijon mustard
6 tablespoons Wasabi powder, mixed with a little water to make a paste
500 millilitres Vegetable oil

Process all the ingredients, except the oil, in a food processor and, with the motor still running, gradually add the oil in a steady stream, until a thick mayonnaise forms.
