|I tablespoon lemon Juice|
|3 tablespoons||Japanese rice vinegar or white wine vinegar|
|2 tablespoons||Soya sauce|
|2 tablespoons||Dijon mustard|
|6 tablespoons||Wasabi powder, mixed with a little water to make a paste|
|500 millilitres||Vegetable oil|
Process all the ingredients, except the oil, in a food processor and, with the motor still running, gradually add the oil in a steady stream, until a thick mayonnaise forms.
