3tablespoonsJapanese rice vinegar or white wine vinegar
2tablespoonsSoya sauce
2tablespoonsDijon mustard
6tablespoonsWasabi powder, mixed with a little water to make a paste
500millilitresVegetable oil

Directions

Process all the ingredients, except the oil, in a food processor and, with the motor still running, gradually add the oil in a steady stream, until a thick mayonnaise forms.
