Warm goat's cheese salad

Ingredients

4Little gem lettuce; separated
1Handful baby spinach leaves
½Cucumber; sliced
ounceCherry tomatoes; quartered
3ouncesMange tout; blanched and cut in
; half
Fresh coriander; finely chopped
Fresh basil; finely chopped
Fresh parsley; finely chopped
2ouncesPine nuts; toasted
4Individual goat's cheeses
Lemon Dressing
4tablespoonsOlive oil
tablespoonLemon juice
1Garlic clove; crushed
Salt and pepper

Directions

Whisk together the dressing ingredients. Pre heat the grill.

Rinse and dry the salad leaves and arrange on four plates. Arrange the cucumber, tomatoes, mange toute, asparagus, herbs and nuts on top.

Place the cheeses on a baking sheet and grill until slightly browned, but not falling apart. Place on top of the salad, drizzle with dressing and serve at once.
