Walnut pesto concentrate

2 | cups | Packedbasil leaves - no stems, wash leaves thoroughly and lay out on paper toweling. Pat dry |
1 | cup | Extra virgin olive oil |
1¼ | cup | Walnuts |
1 | cup | Parmesan or Reggiano cheese |
\N | \N | Salt and pepper to taste |
1 | tablespoon | Freshly-chopped garlic |
Process in the food processor until smooth.
A little goes a long way, as it is extremely full flavored.
