Walnut pesto concentrate

2cupsPackedbasil leaves - no stems, wash leaves thoroughly and lay out on paper toweling. Pat dry
1cupExtra virgin olive oil
cupWalnuts
1cupParmesan or Reggiano cheese
Salt and pepper to taste
1tablespoonFreshly-chopped garlic

Directions

Process in the food processor until smooth.

A little goes a long way, as it is extremely full flavored.
