Walnut pesto concentrate

| 2 | cups | Packedbasil leaves - no stems, wash leaves thoroughly and lay out on paper toweling. Pat dry |
| 1 | cup | Extra virgin olive oil |
| 1¼ | cup | Walnuts |
| 1 | cup | Parmesan or Reggiano cheese |
| Salt and pepper to taste | ||
| 1 | tablespoon | Freshly-chopped garlic |
Directions
Process in the food processor until smooth.
A little goes a long way, as it is extremely full flavored.
