Vegetarian skillet corn bread

Yield: 12 Servings

Measure Ingredient
1½ cup Cornmeal (I use blue corn meal)
1½ cup Unbleached white flour
3½ teaspoon Baking powder
1 tablespoon Sugar or sucanat
1 teaspoon Salt
2¼ cup Soymilk
¼ cup Oil

From: tara@... (Tara McDermott) Date: Mon, 20 Jun 1994 01:29:32 GMT From the New Farm Vegetarian Cookbook, here is a recipe for vegan cornbread: Heat oven to 400 degrees. Put an oiled 10" skillet in oven to heat. Mix ingredients and pour into hot skillet. Bake 30 minutes on top shelf. Cut into wedges and serve.
