Vegetable croquettes

Ingredients

¼poundsGreen beans; chopped
2Carrots; chopped
1Onion; finely chopped
2Cloves garlic; minced
2cupsFresh bread crumbs
¼cupUnbleached all-purpose flour
2tablespoonsSoy milk
1teaspoonDried basil
Salt and pepper; to taste
1tablespoonVegetable oil; up to 2T as needed

Directions

Makes 8 patties.

Steam the broccoli, beans, and carrots until tender. Process the steamed vegetables in a food processor with the onion and garlic. Puree. Mix in the bread crumbs and flour. Stir in the soymilk and basil, and season with salt and pepper. Refrigerate the mixture for at least one hour.

Form the mixture into patties. Heat the oil in a large frying pan and saute the patties on each side until they are browned. Drain them on paper towels.

Serve with salsa or ketchup.
