Uncle dirty dave's cincinatti hot dog sauce

Yield: 1 batch

Measure Ingredient
3 pounds Coarse ground chilli beef
2 tablespoons Bacon drippings
1 pint Beef broth (unsalted)
1 cup Tomato puree (10 1/2 oz)
1 teaspoon Tabasco
1 \N Chili pepper pod, or more to taste
2 \N Onions, coarsely chopped
2 cloves Garlic, finely chopped
3 tablespoons Chilli powder (heaping)
1 tablespoon Oregano
1 tablespoon Cumin
1 teaspoon Paprika
1 teaspoon Mustard, ground
¼ teaspoon Cayenne pepper
1 teaspoon Salt
½ teaspoon Allspice
3 \N Cloves, ground
1 teaspoon Cinnamon

Brown meat; add bacon drippings and cook 5 minutes. Put onion and garlic into blender with enough of the beef broth to let the blender chop the stuff finely. Pour into pan with the meat and leftover broth, tomato puree, Tabasco, pepper, onion and garlic; simmer 30 minutes.

Add the rest of the ingredients and simmer slowly for 1 to 2 hours.

Serve on hot dogs or Polish sausage. Top with raw onion, grated sharp Cheddar cheese and plenty of cold beer (root or real).
