MAKES 6 SERVINGS LACTO/VEGAN
This is a meatless version of TZIMMES, a side dish served during Passover and other Jewish holidays, such as Rash Hashana.
In large saucepan over medium heat, saute onion and garlic in butter or margarine until translucent, about 5 minutes.
Add sweet potatoes and carrots. Cook, stirring often, for 7 minutes. Add pineapple, prunes, water and cinnamon. Stir well.
Cook until sweet potatoes are soft, 20 to 30 minutes. Add more water if necessary to prevent sticking. Season with salt and pepper. Makes 6 servings.
