Twice baked sweet potatoes^

| ¼ | cup | (to 1/2) c skim milk |

Directions
Scrub potatoes. Score ¼" deep all the way around and prick with a fork. Bake until tender, about 45-60 minutes. Cool slightly then cut in half at score marks. Combine with egg white, ¼ c reserved pineapple juice and enough milk to make a good stuffing consistency.
Stir in pineapple; stuff into shells nad sprinkle with paprika. Bake at 400F until hot, about 15 minutes. Sprinkle with parsley.
