Twice baked stuffed spuds

Ingredients

Quantity Ingredient
4-5 medium sized potatoes, washed
½ cup Bacon, cut, cooked, and crumbled
1 small Onion, chopped fine, and sauted
½ teaspoon Garlic powder
1 tablespoon Parsley flakes
teaspoon Cayenne
Milk
Margarine
1 cup Grated cheddar cheese

Directions

Wash potatoes and poke fork into them to allow steam an escape route.

Bake for 1 hour at 400F, or microwave until tender. Cut in half lengthwise. Scoop out potato, leaving a ¼ inch behind. Set aside.

Mash potatoes, adding margarine and milk as you would for mashed potatoes. Add the bacon, garlic, onion, parsley and cayenne. Mix thoroughly. Spoon mashed potatoes back into potato shells. Arrange on a cookie sheet that has been lined with foil. Sprinkle grated cheese over tops and bake at 375F for about 20-30 minutes or until potatoes are heated all the way through, and cheese has melted and is starting to bubble.
