5 | Feet small hog or sheep casings | |
5 | pounds | Turkey meat-15% fat |
2 | teaspoons | Oregano |
2 | teaspoons | Cumin |
1 | teaspoon | Freshly ground cinnamon |
1 | teaspoon | Ground coriander |
1 | teaspoon | Ground ginger |
2 | tablespoons | Sweet paprika |
2 | teaspoons | Cayenne |
½ | teaspoon | Celery seed |
¼ | cup | Dry red wine |
2 | teaspoons | Pepper |
2 | teaspoons | Salt, or to taste |
Directions
Prepare casings. Grind turkey through the fine disk, mix with remaining ingredients and grind again. Stuff into casings and tie off into 3" links. Saute in oil until evenly browned and cooked through.
