|1 tablespoon||Olive or sunflower oil|
|1 small||Onion; chopped finely|
|125 grams||Mushrooms; sliced (4oz)|
|1 teaspoon||Hot chilli powder; or to taste (1 to 2)|
|1 teaspoon||Mixed dried herbs|
|1||397 gram can chopped tomatoes; (14oz)|
|1||198 gram can tuna in water; drained (7oz)|
|1||208 gram can kidney beans in water; drained (7oz)|
|1||198 gram can sweetcorn; drained (7oz)|
|Salt and pepper|
Heat the oil in a large saucepan and gently cook the onion and mushrooms for 3-4 minutes. Stir in the chilli powder, cumin and herbs.
Add the remaining ingredients and season to taste. Bring to the boil, cover and simmer for 15-20 minutes.
