Trout elmere

Ingredients

| ½ | cup | Celery; minced |
| 1 | tablespoon | Olive oil |
| 4 | Strips anchovies | |
| 1 | cup | Seasoned bread crumbs |
| 3 | tablespoons | Romano cheese; grated |
| ½ | Tomato; minced | |
| 1 | Trout filet | |
Directions
Saut minced celery in olive oil. Melt anchovies; add seasoned bread crumbs. Simmer until almost dry. Add grated Romano cheese. This is the Elmere dressing. Salt and pepper trout filet. Spread Elmere dressing on trout; roll. Broil in lemon butter sauce, adding minced tomato.
