|½ small||Honeydew or Galia melon|
|300 grams||Cooked chicken; skin discarded, cut|

|75 grams||Baby button mushrooms; (3oz)|
|1 \N||Grapefruit; peeled and|
|\N \N||; segmented|
|1 \N||200 gram car virtually fat-free fromage; (7oz)|

|\N \N||Grated zest of 1 lime|
|1 teaspoon||Chopped fresh mint|
Cut the melon into small pieces or use a melon baller to make it into balls.
Place the chicken, melon, mushrooms and grapefruit segments in a bowl. Add the fromage frais, lime zest and mint and toss together until evenly mixed.
Divide between 6 individual serving dishes and chill well before serving.
