Traditional raisin pie

Ingredients

cupBrown sugar
¼cupFlour
½teaspoonSalt
¼cupLemon juice
2teaspoonsLemon peel
2cupsWater
2cupsChopped Sultana Raisins
1Uncooked 9-inch pie shell

Directions

Mix sugar, flour and salt. Add lemon juice, peel, water and raisins.

Cook over boiling water for 15 minutes. When cool, pour into pie shell. Cover with lattice top. Bake 10 minutes at 450F (230C). Reduce heat to 350F (175C) for 30-40 minutes. Serve with almond flavoured whipped cream.
