Ingredients

1½ | pounds | Fish;fillets |
1 | Tomato;chopped; | |
1 | tablespoon | Lemon Juice |
1 | tablespoon | Onion;chopped sauteed |
⅛ | teaspoon | Basil |
¼ | cup | Water |
¼ | teaspoon | Dill Weed |
3 | tablespoons | Butter |
2 | teaspoons | Oil |
2 | cups | Rice;cooked |
Directions
Preheat oven to broil. In an iron skillet, melt butter and saute fish fillets for 5 - 10 minutes until fish is firm. Remove from heat.
In a bowl, combine tomato, lemon juice, onion, basil and dill.
Mound about 2 Tbl. of vegetable mixture onto each fillet, sprinkle with oil, and broil until golden brown - 2 to 3 minutes.
Serve with rice.
