Tomato and fish

Measure Ingredient
1½ pounds Fish;fillets
1 \N Tomato;chopped;
1 tablespoon Lemon Juice
1 tablespoon Onion;chopped sauteed
⅛ teaspoon Basil
¼ cup Water
¼ teaspoon Dill Weed
3 tablespoons Butter
2 teaspoons Oil
2 cups Rice;cooked

Preheat oven to broil. In an iron skillet, melt butter and saute fish fillets for 5 - 10 minutes until fish is firm. Remove from heat.

In a bowl, combine tomato, lemon juice, onion, basil and dill.

Mound about 2 Tbl. of vegetable mixture onto each fillet, sprinkle with oil, and broil until golden brown - 2 to 3 minutes.

Serve with rice.
