| 1 | pounds | Ground beef |
| 2 | tablespoons | Oil |
| 1 | can | (16 oz) stewed tomatoes |
| 1 | can | (17 oz) whole kernel corn; undrained |
| 1 | cup | Sour cream |
| 1 | cup | Cornmeal; (or masa) |
| 1 | can | (14 oz) small pitted ripe olive |
| 2 | teaspoons | Salt |
| 1 | tablespoon | Chili powder |
| ½ | teaspoon | Cumin |
| 2 | cups | Jack cheese |
| 1 | Jar of salsa | |
| 1 | can | (15 oz) red kidney beans |
| ½ | tablespoon | Chicken base |
Directions
Lightly brown onion and beef in oil. Add all other ingredients except cheese. Mix very well.
Sprinkle with cheese, cover and simmer until done. Using a Dutch oven (the best way), 20 minutes with cornmeal, 10-15 with mesa. Using regular oven add 10 minutes at 350°F. For a longer lasting package, substitute TVP (textured vegetable protein) for the ground beef.
