Ingredients

1Onion; chopped
1poundsGround beef
2tablespoonsOil
1can(16 oz) stewed tomatoes
1can(17 oz) whole kernel corn; undrained
1cupSour cream
1cupCornmeal; (or masa)
1can(14 oz) small pitted ripe olive
2teaspoonsSalt
1tablespoonChili powder
½teaspoonCumin
2cupsJack cheese
1Jar of salsa
1can(15 oz) red kidney beans
½tablespoonChicken base

Directions

Lightly brown onion and beef in oil. Add all other ingredients except cheese. Mix very well.

Sprinkle with cheese, cover and simmer until done. Using a Dutch oven (the best way), 20 minutes with cornmeal, 10-15 with mesa. Using regular oven add 10 minutes at 350°F. For a longer lasting package, substitute TVP (textured vegetable protein) for the ground beef.
