Toasted omelette sandwiches

| 2 | teaspoons | Oil | 
| 4 | Eggs; lightly beaten | |
| Fresh herbs to garnish | ||
| 4 | slices | Leg ham | 
| 4 | slices | Tasty cheese | 
| 25 | grams | Butter | 
Directions

1.Heat oil in a pan, add half the egg mixture, tilt pan so eggs cover base, cook until set then remove from pan. Repeat with remaining egg mixture. 
Roll up omelettes, cut into 5 millimetre thick slices. 
2.Spread butter over toast. Top with ham, omelette spirals and cheese. 
3.Cook under a hot grill until cheese is melted. 
4.Serve garnished with fresh herbs.
